  • 40 Peeps Marshmallow Chicks
  • 4 tablespoons unsalted butter
  • 6 cups crispy rice cereal
  • 1 teaspoon pure vanilla extract
  • Pinch of sea salt
  • 1 cup white chocolate chips
  • 1 teaspoon coconut oil (or shortening)
  • Sprinkles (optional)

Instructions

  • Grease a 9×13 inch baking dish generously with butter or line it with parchment paper. Unwrap all your Peeps. In a large, heavy-bottomed pot or Dutch oven, melt 4 tablespoons of unsalted butter over low heat. Keep the heat low to prevent browning.
  • Once the butter is mostly melted, add 40 Peeps marshmallow chicks to the pot. Stir continuously with a rubber spatula, allowing the Peeps to slowly melt down. You want them mostly melted and gooey, but it’s best to leave a few small, unmelted pieces of Peep in the mixture for extra gooeyness.
  • Once your Peeps are about 90% melted and wonderfully gooey, remove the pot from the heat. Stir in 1 teaspoon of pure vanilla extract and a tiny pinch of sea salt. Work quickly but gently.
  • Now, add 6 cups of crispy rice cereal to the pot. Using your buttered rubber spatula (or slightly buttered hands!), fold the cereal into the marshmallow mixture until it’s evenly coated. Make sure to scrape the bottom and sides of the pot to ensure every flake gets a delicious sticky coating. The mixture will be incredibly sticky and vibrant.
  • Immediately transfer the mixture into your prepared 9×13 inch baking dish. Using your buttered spatula or a piece of parchment paper, gently press the mixture down evenly into the pan. Do NOT press too hard! A light, even pressure is all you need. Allow them to cool completely at room temperature for at least 1 hour before attempting to cut them.
  • Once completely cool, use a sharp, buttered knife to cut them into squares or fun shapes. For extra clean cuts, wipe your knife with a little butter between each slice.
  • In a microwave-safe bowl, combine 1 cup of good quality white chocolate chips with 1 teaspoon of coconut oil (or shortening). Microwave on high for 30-second intervals, stirring thoroughly after each interval, until the chocolate is smooth and completely melted. If too thick, add another tiny bit of coconut oil; if too thin, let it cool slightly.
  • Arrange your cooled and cut Peeps Rice Krispie Treats on a wire rack over a sheet of parchment paper. Drizzle the melted white chocolate over each square using a spoon or a piping bag. Immediately sprinkle your chosen decorative sprinkles over the still-wet chocolate before it sets. Let the chocolate set completely, about 15-20 minutes, before serving or storing.
