  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup (2 sticks) unsalted butter, softened (for buttercream)
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract (for buttercream)
  • 2-4 tablespoons heavy cream
  • Food coloring (gel or liquid, pastel shades)

Instructions

  • Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper or silicone baking mats. In a medium bowl, whisk together your all-purpose flour, baking powder, and salt. In a large bowl, cream together your softened unsalted butter and granulated sugar until the mixture is light and fluffy (2-3 minutes with an electric mixer). Beat in the large egg and vanilla extract until just combined. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Stop mixing as soon as no dry streaks of flour remain.
  • Lightly flour a clean work surface and roll out your dough to an even 1/4-inch thickness. Use a 2-inch round cookie cutter to cut out shapes, carefully transferring them to your prepared baking sheets, leaving about 1 inch of space between each cookie. Re-roll any scraps gently and cut out more cookies until all the dough is used. Bake for 8-10 minutes, or until the edges are lightly golden and the centers appear set. Let them cool on the baking sheets for 5 minutes before carefully transferring them to a wire rack to cool completely.
  • Beat your softened unsalted butter in a large bowl with an electric mixer on medium-high speed until it’s light and fluffy, about 3-4 minutes. Scrape down the sides of the bowl, then gradually add the powdered sugar, one cup at a time, mixing on low speed until each addition is incorporated, then increasing to medium until smooth. Once all the sugar is in, beat in the vanilla extract. Gradually add the heavy cream, one tablespoon at a time, beating until the frosting reaches a gloriously light and spreadable consistency, adding more cream if needed. Divide the buttercream into small bowls and add a tiny drop of your chosen pastel food coloring to each, mixing until you achieve your desired soft hues.
  • Once your cookies are completely cool, pair up cookies of similar size and shape. Take one cookie and, using a small offset spatula or a piping bag fitted with a round tip, pipe or spread a generous swirl of your pastel buttercream onto the flat side. Gently top with a second cookie, pressing down ever so slightly until the buttercream just reaches the edges. Arrange them artfully on a serving platter.
