Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 pound white fondant
  • 1/4 cup powdered sugar, for dusting
  • Various edible gel food colorings
  • 1 tablespoon clear vanilla extract (or vodka)
  • Small paint brushes (food safe)

Instructions

  • In a large bowl, cream together one cup of softened unsalted butter and one cup of granulated sugar until light and fluffy, about 3-4 minutes. Beat in one large egg and two teaspoons of vanilla extract until just combined. In a separate bowl, whisk together two and a half cups of all-purpose flour, one teaspoon of baking powder, and half a teaspoon of salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Divide the dough into two disks, wrap them tightly in plastic wrap, and chill in the refrigerator for at least 1 hour, or up to 2 days.
  • Once your dough is thoroughly chilled, preheat your oven to 375°F (190°C) and line baking sheets with parchment paper. On a lightly floured surface, roll out one disk of dough to about 1/4-inch thickness. Using an egg-shaped cookie cutter, cut out your cookies and carefully transfer them to the prepared baking sheets. Bake for 8-10 minutes, or until the edges are lightly golden. Carefully transfer the baked cookies to a wire rack to cool completely before decorating.
  • Lightly dust your work surface with powdered sugar. Unwrap your white fondant and knead it gently for a minute or two until it’s pliable and smooth. Roll the fondant out to approximately 1/8-inch thickness. Use the same egg-shaped cookie cutter to cut out fondant shapes. To adhere the fondant to the cooled cookies, brush the top of each cookie with a very thin layer of water. Carefully place a fondant egg on top of each cookie, gently smoothing out any air bubbles. Allow the fondant-covered cookies to rest for at least 30 minutes to allow the fondant to set slightly before painting.
  • To create your edible paints, place small drops of different edible gel food colorings into separate small palettes or dishes. Add a tiny amount of clear vanilla extract (or vodka) to each color, mixing well with a small, clean food-safe paint brush until you achieve a paint-like consistency. Paint delicate patterns, vibrant stripes, floral designs, or simple polka dots onto the fondant-covered cookies. Allow each color to dry slightly before adding another layer or detail. Once your masterpiece is complete, let the painted cookies dry completely for several hours, or even overnight, before stacking or packaging them.
