  • 1 pound ground beef or Italian sausage
  • 1 medium yellow onion, chopped
  • 2-3 cloves garlic, minced
  • One 28-ounce can crushed tomatoes
  • One 15-ounce can tomato sauce
  • 4 cups beef broth or chicken broth
  • 8 ounces lasagna noodles, broken
  • 2 teaspoons Italian seasoning
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  • Brown the ground meat in a large pot or Dutch oven over medium-high heat. Drain off any excess grease.
  • Add the chopped onion and minced garlic to the pot and sauté until softened, about 5 minutes.
  • Stir in the crushed tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer.
  • Add the broken lasagna noodles to the pot. Stir to ensure they are submerged in the liquid.
  • Simmer for 15-20 minutes, or until the noodles are tender and the soup has thickened slightly. Stir occasionally to prevent sticking.
  • Stir in the ricotta cheese and Parmesan cheese. Cook for another minute until heated through.
  • Ladle the soup into bowls and top with shredded mozzarella cheese and fresh basil or parsley, if desired.
