  • In a small bowl, sprinkle the gelatin powder over two tablespoons of cold water. Stir briefly to combine, then let it sit undisturbed for 5-10 minutes. This crucial step, known as “blooming,” softens the gelatin granules and ensures a smooth, lump-free panna cotta.
  • While the gelatin blooms, in a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Place the saucepan over medium heat, stirring occasionally until the sugar completely dissolves and the mixture just barely begins to simmer around the edges – do not let it come to a rolling boil.
  • In a separate small bowl, whisk together the matcha powder with a few tablespoons of the warm cream mixture until a smooth, vibrant green paste forms, free of any lumps. This step is vital to prevent clumping of the matcha in the final panna cotta.
