- Line a baking sheet with parchment paper or wax paper. Gather all your assorted St. Patrick’s Day sprinkles in small, shallow bowls.
- Gently insert one lollipop stick into the center of each large marshmallow, about halfway through, ensuring it’s secure but doesn’t poke through the top.
- Place the candy melts in a microwave-safe bowl. Heat them in 30-second intervals, stirring thoroughly after each interval, until the candy is completely melted and smooth (1-2 minutes total). If too thick, add about half a teaspoon of vegetable shortening and stir until smooth and flowing.
- Hold a marshmallow pop by its stick and carefully dip the entire marshmallow into the melted green candy coating. Rotate gently to ensure even coverage. Lift the pop out and gently tap the stick against the side of the bowl to allow excess coating to drip off.
- While the candy coating is still wet, immediately hold the pop over your chosen bowl of St. Patrick’s Day sprinkles and rotate, showering it generously with gold, shamrock, and green sanding sugar.
- Place the decorated pop stick-side down into a piece of floral foam or a tall glass, or lay it flat on your parchment-lined baking sheet to set completely. Repeat with the remaining marshmallows.
