  • 1 cup of unsalted butter, softened
  • 1/2 cup of granulated sugar
  • 1/4 teaspoon of fine sea salt
  • 4 large eggs
  • 1/2 cup of fresh lime juice
  • 2 tablespoons of lime zest
  • 1/4 cup of confectioners’ sugar
  • 3-4 drops of green food coloring
  • 1 teaspoon of vanilla extract
  • 1 cup of heavy cream
  • 2 tablespoons of powdered sugar
  • 1/2 teaspoon of vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened unsalted butter, granulated sugar, and a pinch of fine sea salt until light and fluffy (about 2-3 minutes with an electric mixer). Gradually add the all-purpose flour, mixing on low speed until just combined. Press the dough evenly into your shamrock-shaped tart molds or muffin tin cavities. Pierce the bottom of each crust several times with a fork. Bake for 12-15 minutes, or until the edges are lightly golden. Let cool completely on a wire rack.
  • In a medium heatproof bowl, whisk together the large eggs, granulated sugar, fresh lime juice, and lime zest until thoroughly combined. Set this bowl over a saucepan of simmering water (double boiler). Continuously whisk the mixture for 8-12 minutes, or until it thickens to the consistency of mayonnaise. Remove from heat and stir in the remaining unsalted butter until fully incorporated. Add a few drops of green food coloring and a touch of vanilla extract. Strain the curd through a fine-mesh sieve into a clean bowl. Press plastic wrap directly onto the surface and refrigerate for at least 2-3 hours, or until firmly set.
  • In a very cold bowl with very cold heavy cream, begin beating the cream with an electric mixer on medium-high speed. As it starts to thicken, gradually add the powdered sugar and vanilla extract. Continue beating until stiff peaks form.
  • Once the crusts are cooled and the lime curd is chilled and set, carefully remove the shortbread crusts from their molds. Generously fill each tart shell with the luscious lime curd. Smooth the top. Use a piping bag to pipe a swirl or dollop of whipped cream topping onto the center of each tart. Garnish with a tiny fresh mint leaf or a delicate sprinkle of lime zest if desired. Serve chilled.
