  • 2.5 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 0.5 teaspoon of salt
  • 1 cup (2 sticks) of unsalted butter, softened
  • 1.5 cups of granulated sugar
  • 0.5 cup of brown sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of Earl Grey loose leaf tea
  • 0.5 cup of whole milk
  • 2 cups of powdered sugar
  • 3-4 tablespoons of whole milk
  • 1 tablespoon of vanilla bean paste
  • 0.125 teaspoon of finely ground Earl Grey loose leaf tea (optional, for glaze)

Instructions

  • Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper or silicone mats.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  • In a small saucepan, gently heat 0.5 cup of whole milk and 1 tablespoon of Earl Grey loose leaf tea over low heat until just simmering. Immediately remove from heat, cover, and let steep for 10-15 minutes. Strain the milk, pressing the tea leaves gently, and set aside to cool completely.
  • In a large mixing bowl, using an electric mixer, cream together the softened unsalted butter with the granulated sugar and brown sugar until light, fluffy, and pale (2-3 minutes).
  • Beat in the large eggs one at a time, ensuring each is fully incorporated. Scrape down the sides of the bowl.
  • Slowly pour in the cooled Earl Grey infused milk and vanilla extract, beating until just combined.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  • Bake for 9-11 minutes, or until the edges are lightly golden and the centers are just set. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  • To make the vanilla bean glaze: In a small bowl, combine the powdered sugar with 3-4 tablespoons of whole milk (added slowly, one teaspoon at a time) and 1 tablespoon of vanilla bean paste. Whisk until smooth and pourable. Optionally, stir in 0.125 teaspoon of finely ground Earl Grey loose leaf tea.
  • Once cookies are completely cool, drizzle the glaze artfully over each cookie. Let the glaze set for 30 minutes to an hour at room temperature.
