Instructions

  • Line a 12-cup standard muffin tin with paper liners. In a large non-stick pot or Dutch oven, melt 4 tablespoons of butter over low heat. Once mostly melted, add 5 cups of miniature marshmallows. Stir constantly until the marshmallows are completely melted and smooth. Remove from heat and immediately stir in 6 cups of Rice Krispies cereal until evenly coated. Spoon about 2-3 tablespoons of the mixture into each muffin liner and press down to form a firm, even base. Set aside.
  • In a medium-sized bowl, combine 1 cup of creamy peanut butter with 1 cup of powdered sugar. Mix until fully incorporated and a thick, dough-like consistency forms. Divide this peanut butter mixture evenly among the 12 Rice Krispy bases in the muffin tin. Press it gently to form a smooth, even layer over the Rice Krispies.
  • Combine 1 cup of semi-sweet chocolate chips with 2 tablespoons of creamy peanut butter in a microwave-safe bowl. Heat in the microwave in 30-second intervals, stirring well after each, until completely melted and smooth (1-2 minutes total). Alternatively, use a double boiler method.
  • Spoon or drizzle about 1-2 tablespoons of the melted chocolate mixture over the top of each peanut butter layer. Spread evenly. Place the muffin tin in the refrigerator for at least 30-60 minutes, or until the chocolate is completely set and firm.
