  • 1/2 Red Onion, thinly sliced
  • 1 large Bell Pepper (any color), cored and finely diced
  • 1 (15-ounce) can Garbanzo Beans (Chickpeas), drained and rinsed
  • 1/4 cup Pepperoncini, thinly sliced
  • 2 tablespoons Fresh Parsley, chopped, for garnish (optional)
  • Tangy Herb Dressing ingredients:
  • 1/2 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Honey or Maple Syrup
  • 1 teaspoon Dried Oregano
  • 2 cloves Garlic, minced
  • 1/2 teaspoon Salt, or to taste
  • 1/4 teaspoon Black Pepper, freshly ground, or to taste

Instructions

  • Wash and thoroughly dry your romaine lettuce, then finely chop it into uniform, bite-sized pieces (about half-inch squares). Halve your cherry tomatoes, thinly slice your red onion, and core and finely dice your bell pepper. Drain and rinse your garbanzo beans (chickpeas) well. For the meats and cheese, stack your salami, pepperoni, and provolone slices, then cut them into thin strips or small cubes, ensuring they are roughly the same size as your chopped lettuce. Thinly slice your pepperoncini. Place all the chopped ingredients – romaine, salami, pepperoni, provolone, cherry tomatoes, red onion, bell pepper, garbanzo beans, and pepperoncini – into a very large bowl.
  • In a small bowl or jar, combine the extra virgin olive oil, red wine vinegar, Dijon mustard, and a touch of honey or maple syrup. Finely mince your fresh garlic or press it, then add it to the mixture along with dried oregano, a pinch of salt, and freshly cracked black pepper. Whisk vigorously until all ingredients are thoroughly combined and the dressing appears emulsified. If using a jar, simply screw on the lid tightly and shake well until perfectly blended.
  • Pour about half to two-thirds of the Tangy Herb Dressing over the prepared chopped ingredients in your large bowl. Use two large serving spoons or clean hands to gently but thoroughly toss everything together, ensuring every piece is lightly coated. Add more dressing if desired, tasting as you go. Serve immediately, garnished with an extra sprinkle of fresh parsley if desired.
