  • 3 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1-2 teaspoons red gel food coloring
  • 1 teaspoon white vinegar
  • 1 cup buttermilk
  • 1 cup white chocolate chips (optional)

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract, white vinegar and red food coloring.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  • Stir in the white chocolate chips (if using).
  • Cover the dough and chill in the refrigerator for at least 30 minutes (or longer, even overnight).
  • Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheets.
  • Bake for 8-10 minutes, or until the edges are set but the centers are still slightly soft.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
