  • 1 cup granulated sugar

  • 4 large eggs

  • 1 cup heavy cream
  • 1 tbsp instant espresso powder

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan. Melt the butter and half of the semi-sweet chocolate chips together over low heat, stirring until smooth. In a separate bowl, mix granulated sugar, brown sugar, cocoa powder, flour, and salt. Whisk the eggs into the melted chocolate mixture until fully combined. Gradually add dry ingredients to the wet ingredients, folding gently. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick emerges with moist crumbs.
  • In a heatproof bowl, melt the remaining chocolate chips over a pot of simmering water. Once smooth, remove from heat and let it cool slightly. Whip the heavy cream with espresso powder until peaks form. Fold the cooled chocolate gently into the whipped cream until blended. Spread the mousse evenly over the cooled brownie layer.
