  • 2 large eggs

  • 1.5 quarts (approx. 6 cups) ice cream, any flavor
  • 1 cup chocolate chips (optional)
  • 1 cup dark chocolate, chopped
  • 2 tablespoons coconut oil
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup crushed pretzels (optional)
  • 1/2 cup candy sprinkles (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats. In a medium bowl, whisk together the all-purpose flour, unsweetened Dutch-processed cocoa powder, baking soda, and salt. Set this dry mixture aside.
  • In a large bowl, using an electric mixer, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, usually about 2-3 minutes. This aeration is key for a tender cookie.
  • Beat in the large egg and then the vanilla extract, ensuring each is fully incorporated before adding the next. The mixture should look smooth and creamy.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix, as this can lead to tough cookies. The dough will be thick and fudgy. Stir in your chocolate chips at this point if you’re using them.
  • You can either scoop 2-tablespoon portions of dough onto the prepared baking sheets, leaving about 2 inches between each. For more uniform cookies, roll the dough onto a piece of parchment paper to about ¼-inch thickness and use a round cookie cutter. Bake for 8-10 minutes, or until the edges are set but the centers still look slightly soft and puffed. Do not overbake! As soon as they come out of the oven, slide the parchment paper with the cookies onto a wire rack to cool completely. Cooling is absolutely crucial before assembly, otherwise, your ice cream will melt.
  • Start by finely chopping your dark chocolate. In a microwave-safe bowl, combine the chopped dark chocolate and the coconut oil. Microwave in 30-second intervals, stirring thoroughly after each, until the chocolate is completely melted and smooth. Stir in any desired additions like chopped nuts, crushed pretzels, or colorful candy sprinkles. Keep the mixture nearby and ready for dipping your assembled sandwiches.
  • Once your cookies are completely cool, lay out half of your cookies, flat side up, on a clean surface. Scoop your favorite ice cream onto the flat side of each cookie. You’ll want a generous scoop. Gently place another cooled cookie, flat side down, on top of the ice cream scoop. Lightly press down to create a “sandwich.” Smooth the edges of the ice cream with a small offset spatula or butter knife for a neat finish. Immediately place the ice cream sandwiches on a baking sheet lined with parchment paper and transfer them to the freezer for at least 30-60 minutes to firm up.
  • If desired, dip the firmed ice cream sandwiches into the prepared chocolate cookie coating, allowing excess to drip off. You can also roll the exposed ice cream edges in sprinkles, crushed graham crackers, peppermint candies, or other festive decorations.
  • Once assembled and firmed up in the freezer, individually wrap each ice cream sandwich tightly in plastic wrap. Place the individually wrapped sandwiches in an airtight freezer-safe container or a heavy-duty freezer bag. Stored this way, they will remain fresh and delicious for up to 2-3 weeks in the freezer.
