Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup plain yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (or Kashmiri chili powder for milder heat)
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup tomato paste
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder (optional)
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried fenugreek leaves (kasoori methi), crushed
  • 1 cup heavy cream
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  • Marinate the chicken with yogurt, ginger-garlic paste, lemon juice, garam masala, turmeric powder, red chili powder, and salt for at least 30 minutes, or preferably overnight.
  • Melt butter in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the ginger-garlic paste and cook for another minute until fragrant.
  • Stir in the crushed tomatoes, tomato paste, garam masala, red chili powder (optional), sugar, and dried fenugreek leaves. Bring to a simmer and cook for at least 20 minutes, stirring occasionally, until the sauce has thickened.
  • Add the marinated chicken to the sauce and cook until the chicken is cooked through, about 15-20 minutes. If the sauce becomes too thick, add a little water.
  • Stir in the heavy cream and salt to taste. Heat through.
  • Garnish with fresh cilantro and serve hot with naan bread or rice.
