  • 1 pound ground beef (80/20 recommended)
  • 1 pound egg noodles
  • 8 ounces cremini mushrooms, sliced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Chopped chives (for garnish)

Instructions

  • In a large skillet or pot, melt butter over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  • If necessary, brown ground beef in batches to avoid overcrowding the pan.
  • Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  • Stir in sliced mushrooms and cook until softened and lightly browned, about 5-7 minutes.
  • Sprinkle flour over the beef and mushroom mixture. Cook for 1 minute, stirring constantly.
  • Gradually pour in beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
  • Stir in Dijon mustard and Worcestershire sauce.
  • Reduce heat to low, cover, and simmer for 15 minutes, or until the sauce has thickened slightly.
  • While the sauce simmers, cook egg noodles according to package directions. Drain well.
  • Temper the sour cream by stirring in a spoonful of the hot sauce. Then, stir the tempered sour cream into the stroganoff sauce. Do not boil after adding the sour cream.
  • Season with salt and pepper to taste.
  • Serve the Ground Beef Stroganoff over the cooked egg noodles. Garnish with fresh parsley and chopped chives, if desired.
