Ingredients

Scale
  • 1 pound Ground Beef (80/20 lean-to-fat ratio recommended)
  • 2 tablespoons Olive Oil
  • 1 large Yellow Onion, thinly sliced
  • 1 large Green Bell Pepper, thinly sliced
  • 1 large Red Bell Pepper, thinly sliced
  • 1 cup Mushrooms, sliced (optional)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 tablespoon Worcestershire Sauce
  • 8 slices Provolone Cheese
  • 4 Hoagie Rolls
  • 2 cups Beef Broth (for Au Jus)
  • 1 tablespoon Worcestershire Sauce (for Au Jus)
  • 1 teaspoon Soy Sauce (for Au Jus)
  • 2 cloves Garlic, minced (for Au Jus)
  • 1 sprig fresh Thyme (for Au Jus)
  • 1 teaspoon Cornstarch (for Au Jus)
  • 2 tablespoons Water (for Au Jus slurry)

Instructions

  • Thinly slice the yellow onion and both green and red bell peppers. If you’re using mushrooms, slice those as well. Aim for uniform slices so they cook evenly and caramelize beautifully. In a large skillet or cast-iron pan, heat a tablespoon of olive oil over medium-high heat. Add the sliced onions and peppers to the hot pan. Sauté them, stirring occasionally, for about 8-10 minutes until they soften and begin to caramelize, developing a nice golden-brown color. If you’re adding mushrooms, toss them in during the last 3-4 minutes with the other vegetables. Once tender and slightly browned, remove the vegetables from the pan and set them aside. They’ll be added back in later, ensuring they retain some texture.
  • Add another tablespoon of olive oil to the same skillet if needed, then add your ground beef, breaking it up with a wooden spoon or spatula. Cook the ground beef over medium-high heat, stirring frequently, until it’s fully browned and no pink remains. This usually takes about 5-7 minutes. Once browned, drain any excess grease from the pan to prevent the cheesesteaks from becoming greasy. Now, it’s time to season the beef generously. Sprinkle in the garlic powder, onion powder, paprika, salt, and black pepper. Stir well to ensure the spices are evenly distributed throughout the beef. Add a splash of Worcestershire sauce at this point; it deepens the savory notes and adds a fantastic umami kick that truly elevates the flavor. Continue to cook for another 1-2 minutes, allowing the spices to bloom and meld with the beef.
  • Return the sautéed onions, peppers, and mushrooms (if using) to the skillet with the seasoned ground beef. Toss everything together, mixing until the vegetables are thoroughly combined with the beef. Reduce the heat to low. Divide the beef and vegetable mixture into portions directly in the pan, forming a few mounds. Lay 2-3 slices of provolone cheese over each mound, completely covering the beef and vegetables. Cover the skillet with a lid or a large sheet of foil. Let the cheese melt for about 2-3 minutes, just until it’s perfectly gooey and bubbly. While the cheese is melting, lightly toast your hoagie rolls. You can do this by splitting them open and placing them cut-side down in a dry pan on medium heat for a minute or two, or briefly under a broiler. Be careful not to burn them; you want a light golden crispness to stand up to the filling. The cheese is perfectly melted when it’s soft, pliable, and glistening, with a few delicious bubbles.
  • Using a spatula, scoop up a cheesy mound of beef and vegetables directly from the pan and carefully place it into a toasted hoagie roll. Serve immediately while hot and the cheese is still wonderfully melty.
  • In a small saucepan, combine beef broth, a splash of Worcestershire sauce, a hint of soy sauce for extra depth, minced garlic, and a sprig of fresh thyme. Bring this mixture to a gentle simmer over medium heat, allowing the flavors to meld for about 5 minutes. In a small bowl, whisk together a teaspoon of cornstarch with two tablespoons of cold water to create a slurry. Gradually whisk this slurry into the simmering broth. Continue to stir until the au jus thickens slightly to a beautiful, translucent consistency, perfect for dipping. Remove from heat and discard the thyme sprig before serving in small ramekins alongside your cheesesteaks.
