  • 1 pound lean ground beef
  • 10-12 hard taco shells
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth or water
  • 2 tablespoons tomato paste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Shredded lettuce, for serving
  • Diced tomatoes, for serving
  • Sour cream, for serving
  • Salsa, for serving
  • Fresh cilantro, chopped, for serving
  • Avocado or guacamole, for serving

Instructions

  • Preheat your oven to 375°F (190°C). In a large skillet over medium-high heat, cook the lean ground beef, breaking it up with a spoon, until beautifully browned. Drain off any excess grease. Return the skillet to the heat and add the finely diced onion. Sauté for 5-7 minutes until soft and translucent. Add the minced garlic and cook for another minute until fragrant.
  • Stir in the chili powder, cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Cook these spices with the beef and onions for about 1 minute, stirring constantly, to allow them to bloom and deepen in flavor. Pour in the beef broth (or water) and stir in the tomato paste. Bring the mixture to a simmer and cook for 5-7 minutes, or until most of the liquid has evaporated and the sauce has thickened, coating the beef beautifully. Taste and adjust seasonings if needed.
  • Arrange hard taco shells open-side up in a 9×13 inch baking dish. If needed, gently lean them against each other in rows. Spoon the seasoned ground beef mixture evenly into each taco shell, being generous but leaving space for cheese. Sprinkle a generous amount of freshly grated cheddar and Monterey Jack cheese blend over the top of the meat in each taco.
  • Carefully transfer the baking dish to your preheated oven. Bake for 10-15 minutes, or until the cheese is perfectly melted and bubbly, and the taco shells are lightly crisped around the edges. Keep an eye on them to ensure they don’t get too dark.
  • Carefully transfer the baked tacos from the baking dish to a large platter. Serve immediately alongside a fresh toppings bar with shredded lettuce, diced tomatoes, sour cream, salsa, fresh cilantro, and avocado or guacamole for guests to customize their tacos.
