  • 0.5 cup (100g) Light Brown Sugar
  • 4 Large Eggs

  • 0.75 cup (64g) Unsweetened Cocoa Powder
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt
  • 1.5 teaspoons Gel Green Food Coloring
  • 1 cup (170g) White Chocolate Chips (optional)
  • 8 ounces (226g) Cream Cheese, softened
  • 0.5 cup (113g) Unsalted Butter, softened
  • 4 cups (480g) Powdered Sugar
  • 1 teaspoon Pure Vanilla Extract
  • Pinch of Salt
  • 1-2 tablespoons Milk or Cream (as needed)

Instructions

  • Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy lifting.
  • In a large microwave-safe bowl, combine your unsalted butter, granulated sugar, and light brown sugar. Melt the butter and sugars together in the microwave in 30-second intervals, stirring after each, until the butter is fully melted and the mixture is smooth and glossy. Let this mixture cool for a few minutes.
  • Once slightly cooled, whisk in the large eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the pure vanilla extract. Add your gel green food coloring – start with about a teaspoon or more, until you achieve a vibrant emerald green.
  • In a separate medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt. Gradually add the dry ingredient mixture to the wet mixture, mixing with a rubber spatula until just combined. Do not overmix! If using white chocolate chips, gently fold them in now.
  • Pour the green batter into your prepared 9×13 inch baking pan and spread it evenly with the spatula. Gently tap the pan on the counter a few times to release any air bubbles.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs, but not wet batter. The edges should look set, but the center might still be slightly soft. Don’t overbake! Once baked, remove the pan from the oven and let the brownies cool completely in the pan on a wire rack before frosting.
  • While brownies are cooling, prepare the cream cheese frosting: In a large mixing bowl, beat the softened cream cheese and softened unsalted butter together with an electric mixer on medium speed until smooth, light, and fluffy.
  • Gradually add the powdered sugar, one cup at a time, beating well after each addition until fully incorporated. Mix in the pure vanilla extract and a tiny pinch of salt. If the frosting seems too thick, add a tablespoon of milk or cream at a time until you reach your desired spreadable consistency.
  • Once your Green Velvet Brownies are completely cooled, use the parchment paper overhang to carefully lift the cooled brownie slab out of the pan and place it on a cutting board or serving platter. Dollop the prepared cream cheese frosting generously over the entire surface of the brownies. Spread the frosting evenly from edge to edge, creating beautiful swirls and peaks.
  • Using a sharp knife, slice the frosted brownies into individual squares. For clean cuts, wipe your knife with a warm, damp cloth between each slice. Arrange them artfully on a platter and serve!
