  • 1 1/2 cups pumpkin puree

  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 2 large eggs
  • 1 (12 ounce) can evaporated milk
  • 1/2 cup (1 stick) cold butter, cubed
  • 1/4 teaspoon salt
  • Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  • In a large bowl, combine gluten-free flour, oats flour, brown sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • Press the crust mixture into the prepared baking pan. Bake for 15 minutes, or until lightly golden.
  • While the crust is baking, prepare the filling. In a large bowl, whisk together pumpkin puree, granulated sugar, pumpkin pie spice, cinnamon, nutmeg, ginger, eggs, and evaporated milk until smooth.
  • Pour the pumpkin filling over the pre-baked crust.
  • Bake for 35-40 minutes, or until the filling is set and a toothpick inserted into the center comes out clean or with a few crumbs.
  • Let the bars cool completely in the pan before slicing and serving. Dust with powdered sugar, if desired.
