  • 1/2 cup Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt

  • 2 large Eggs
  • 1/2 cup Milk (or Dairy-Free Alternative)
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Dried Cranberries
  • 1 tablespoon Orange Zest
  • 2 cups Powdered Sugar
  • 3-4 tablespoons Orange Juice
  • 1 teaspoon Orange Zest (for icing)

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the gluten-free flour blend, sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the eggs, milk (or dairy-free alternative), and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • Gently fold in the dried cranberries and orange zest.
  • Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick circle.
  • Use a sharp knife or a biscuit cutter to cut out 8 scones.
  • Place the scones on the prepared baking sheet.
  • Bake for 18-22 minutes, or until golden brown.
  • Let the scones cool on a wire rack before icing.
  • To make the orange icing, whisk together the powdered sugar, orange juice, and orange zest until smooth. Add more orange juice if needed to reach the desired consistency.
  • Drizzle the icing over the cooled scones. Garnish with additional orange zest, if desired.
