Ingredients

  • 2 cups shredded cooked chicken
  • 8-10 small to medium-sized gluten-free tortillas
  • 4 oz softened cream cheese
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 1-2 tablespoons taco seasoning
  • Olive Oil or Cooking Spray

Instructions

  • Preheat oven to 400°F (200°C) or prepare your air fryer according to manufacturer’s instructions.
  • In a bowl, combine shredded chicken, cream cheese, salsa, cheddar cheese, and taco seasoning. Mix well.
  • Warm gluten-free tortillas slightly in the microwave or on a dry skillet to make them more pliable.
  • Place about 2-3 tablespoons of the chicken mixture in the center of each tortilla.
  • Roll the tortilla tightly around the filling and place seam-side down on a baking sheet lined with parchment paper or in the air fryer basket.
  • Brush the taquitos lightly with olive oil or spray them with cooking spray.
  • Bake in the preheated oven for 15-20 minutes, or air fry for 8-10 minutes at 375°F (190°C), until golden brown and crispy.
  • Serve immediately with your favorite dipping sauces, such as guacamole, sour cream, or salsa.
