  • 2 fresh limes (juice and zest)
  • 1/4 cup good quality olive oil
  • 2 finely minced cloves garlic
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 3/4 teaspoon freshly ground black pepper
  • 1 teaspoon honey or agave nectar (optional)
  • 2-3 ripe avocados
  • 1/4 cup finely diced red onion
  • 2-3 tablespoons freshly chopped cilantro
  • 1/2 to 1 lime (juice)
  • Pinch of salt (for topping)
  • Grind of fresh black pepper (for topping)
  • Thin slices of jalapeño (optional, for garnish)

Instructions

  • For the chicken marinade: In a medium bowl or a large resealable plastic bag, whisk together the juice and zest of two fresh limes, about ¼ cup of good quality olive oil, 2 finely minced cloves of garlic, 1 teaspoon each of onion powder, ground cumin, and chili powder, ½ teaspoon of smoked paprika, and about ¾ teaspoon each of salt and freshly ground black pepper. If you like a touch of sweetness and depth, a teaspoon of honey or agave nectar is a fantastic addition. Stir it all until it’s well combined and fragrant!
  • Add your prepared chicken breasts to this vibrant marinade, making sure each piece is thoroughly coated. Massage the marinade into the chicken for a minute or so. Seal the bag or cover the bowl and pop it into the refrigerator for at least 30 minutes, but for the most mind-blowing flavor, let it marinate for 2 to 4 hours. Don’t go much longer than 6 hours, as the lime juice can start to “cook” the chicken.
  • When you’re ready to cook, remove the chicken from the fridge about 15-20 minutes before to bring it closer to room temperature. Prepare your cooking surface: heat a large skillet (cast iron works wonders here!) over medium-high heat with a tablespoon of olive oil, or preheat your grill to medium-high. Once hot, carefully add the chicken breasts, making sure not to overcrowd the pan. Cook for about 5-7 minutes per side, depending on thickness, until the chicken is beautifully golden brown, slightly charred in spots, and cooked through to an internal temperature of 165°F (74°C). Once cooked, transfer the chicken to a clean cutting board and let it rest for 5-10 minutes. Slice it against the grain for maximum tenderness.
  • For the avocado topping: In a medium bowl, take 2-3 ripe avocados and scoop out their luscious green flesh. Mash them gently with a fork, leaving some delightful chunks for texture. Stir in about ¼ cup of finely diced red onion, 2-3 tablespoons of freshly chopped cilantro and the juice of a half to a whole lime, depending on your preferred tanginess. Season with a good pinch of salt and a grind of fresh black pepper. Mix everything together until just combined.
  • Assemble the fiesta! Take your beautifully rested and sliced chicken, arranging it artfully on a serving platter or individual plates. Then, with a generous hand, dollop or spread that incredible creamy avocado topping directly over the warm chicken slices. For an added touch of freshness and vibrant color, sprinkle a little extra chopped cilantro over the top. You can also add thin slices of jalapeño if you like an extra kick. Serve immediately.
