  • 1 pound ground beef
  • 1 yellow onion, finely diced
  • 1 green bell pepper, finely diced
  • 3 cloves garlic, minced
  • 6 ounces tomato paste
  • 1 (28 ounce) can crushed tomatoes
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 hamburger buns, toasted
  • 1/2 cup mayonnaise
  • 1-2 tablespoons Sriracha
  • 1 tablespoon lime juice
  • 1 teaspoon honey

Instructions

  • Finely dice your yellow onion and green bell pepper. Mince your garlic. In a large, heavy-bottomed skillet or Dutch oven over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the ground beef. Break it up with a wooden spoon and cook until beautifully browned and no longer pink. Drain any excess fat from the pan.
  • Add the diced onion and bell pepper to the skillet with the cooked beef. Stir frequently and cook until the vegetables have softened, about 5-7 minutes. Add the minced garlic and cook for just one minute more until fragrant. Push the meat and veggies to one side and add the tomato paste, stirring it for about 1 minute until it darkens slightly.
  • Add the crushed tomatoes, apple cider vinegar, brown sugar, yellow mustard, Worcestershire sauce, smoked paprika, chili powder, salt, and black pepper. Stir everything together until well combined, scraping up any browned bits from the bottom of the pan. Bring the mixture to a gentle simmer, then reduce the heat to low, cover the skillet, and let it cook for at least 20-30 minutes, stirring occasionally. The sauce should become thick and luscious. Taste and adjust seasonings as needed.
  • While the Sloppy Joe mixture simmers, slice your buns and lightly toast them in a dry skillet, under the broiler, or in a toaster oven until golden brown and slightly crispy.
  • In a small bowl, combine 1/2 cup of mayonnaise, 1-2 tablespoons of Sriracha (depending on your preferred spice level), 1 tablespoon of lime juice, and 1 teaspoon of honey. Whisk all the ingredients together thoroughly until smooth and well combined.
  • Generously spoon a hearty portion of the warm Sloppy Joe mixture onto the bottom half of each toasted bun. Drizzle the Sriracha mayo over the meat mixture. Place the top half of the bun gently on top. Serve immediately.
