  • 1 medium Onion, diced
  • 4 cloves Garlic, minced
  • 700 grams Crushed Tomatoes
  • 500 ml Beef Broth
  • 350 grams Pasta (such as penne, rotini, or shells)
  • 120 ml Heavy Cream
  • 60 grams Parmesan Cheese, grated
  • 1 tablespoon Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1/2 teaspoon Red Pepper Flakes (or to taste)
  • 1 teaspoon Salt (or to taste)
  • 1/2 teaspoon Black Pepper (or to taste)
  • 2 tablespoons Fresh Parsley, chopped (for garnish)
  • 120 grams Ricotta Cheese
  • 60 grams Mozzarella Cheese, shredded
  • 30 grams Parmesan Cheese, grated
  • 2 tablespoons Heavy Cream
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Black Pepper

Instructions

  • Heat 1 tablespoon of olive oil in a large, deep pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until completely browned and no longer pink (about 6-8 minutes). Drain any excess fat.
  • Reduce the heat to medium. Add the diced onion to the pot with the beef and cook, stirring frequently, until softened and translucent (about 5-7 minutes).
  • Stir in the minced garlic, dried oregano, dried basil, and red pepper flakes. Cook for 1 minute more, stirring constantly, until fragrant.
  • Pour in the crushed tomatoes and beef broth. Season with salt and black pepper. Stir well to combine and bring the mixture to a gentle simmer.
  • Add the uncooked pasta directly into the pot, ensuring it is mostly submerged. If needed, add a little more broth or water to just cover the pasta. Cover the pot with a lid and reduce the heat to low. Simmer gently for 12-15 minutes, stirring every few minutes to prevent sticking and ensure even cooking, until the pasta is tender but still has a slight bite (al dente).
  • While the pasta is cooking, prepare the Creamy Cheese Topping: In a medium bowl, combine the ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, 2 tablespoons of heavy cream, garlic powder, and black pepper. Mix until well combined and smooth.
  • Once the pasta is cooked and most of the liquid has been absorbed, remove the pot from the heat. Stir in the heavy cream (120ml) and the grated Parmesan cheese (60g) until melted and the sauce has a creamy consistency. Taste and adjust seasonings as needed. If the sauce is too thick, add a splash more broth or cream.
  • Immediately before serving, spoon generous dollops of the prepared Creamy Cheese Topping over the hot pasta. Garnish generously with fresh chopped parsley and an optional fresh grating of Parmesan cheese.
