  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 2 tablespoons vegetable oil
  • 1 cup (200g) light brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups (approx. 340g) M&M’s candy, divided (1½ cups for dough, ½ cup for topping)
  • 1 cup (170g) milk chocolate chips
  • 1/4 teaspoon sea salt flakes (optional)
  • 1/2 cup (85g) semi-sweet chocolate chips (for drizzle)
  • 1 tablespoon coconut oil (for drizzle)

Instructions

  • Begin by preheating your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later. Lightly grease the parchment to prevent sticking. In a medium bowl, whisk together your all-purpose flour, baking soda, and salt. Set this dry mixture aside.
  • In a large mixing bowl, combine the softened unsalted butter and vegetable oil. Beat these together until smooth and creamy, then add the light brown sugar and granulated sugar. Continue to beat on medium speed for about 2-3 minutes until the mixture is light in color and fluffy, ensuring all sugars are well incorporated. This creaming process is vital for the texture of your bars. Next, crack in the two large eggs, one at a time, beating well after each addition until fully combined. Follow with the vanilla extract, mixing it in until just blended. The wet mixture should now be smooth and beautifully fragrant.
  • Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix, as this can lead to tough bars. Stop mixing as soon as no pockets of dry flour remain – a few streaks are perfectly fine. Now for the fun part: gently fold in about 1½ cups of the M&M’s candy and the milk chocolate chips. You want to distribute them evenly throughout the dough without crushing them. The dough will be thick and sticky, which is exactly what we want for these chewy bars.
  • Press the dough evenly into the prepared 9×13 inch pan. Use the back of a spoon or your hands (lightly floured if sticking) to ensure it’s an even layer. Sprinkle the remaining ½ cup of M&M’s over the top of the dough, gently pressing them in for a vibrant finish. If desired, lightly sprinkle with sea salt flakes for an incredible flavor contrast that really makes the chocolate pop. Bake for 25-30 minutes, or until the edges are golden brown and the center is set but still looks slightly soft. A toothpick inserted into the center should come out with moist crumbs, not wet batter. Avoid overbaking to maintain that perfect chewy texture. Let the bars cool completely in the pan on a wire rack before attempting to cut them, otherwise they may fall apart.
