  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, cold
  • 1 1/2 cups full-fat buttermilk
  • 1 large egg
  • 1/2 cup raisins
  • 1 tablespoon caraway seeds
  • 1 teaspoon fresh orange zest
  • Heavy cream, for brushing
  • Flour, for dusting
  • 1 stick (1/2 cup) unsalted butter, room temperature (for Cinnamon Honey Butter)

  • 2 tablespoons pure honey (for Cinnamon Honey Butter)
  • 1 teaspoon ground cinnamon (for Cinnamon Honey Butter)
  • 1/4 teaspoon vanilla extract (for Cinnamon Honey Butter)

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large mixing bowl, whisk together 4 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of salt, and 2 tablespoons of granulated sugar.
  • Cut 4 tablespoons of cold unsalted butter into small pieces. Using your fingertips or a pastry blender, work the butter into the dry mixture until it resembles coarse crumbs.
  • In a separate bowl, lightly whisk 1 large egg, then combine it with 1 ½ cups of full-fat buttermilk.
  • Make a well in the center of your dry ingredients and pour in the wet mixture. Add in ½ cup of raisins, 1 tablespoon of caraway seeds, and 1 teaspoon of fresh orange zest. Gently mix with a wooden spoon or your hands until just combined. Do not overmix.
  • Turn the dough out onto a lightly floured surface and very lightly knead it a few times, just enough to bring it together into a round, slightly flattened ball. Transfer the dough to your prepared baking sheet. Using a sharp knife or a pastry scraper, score a deep ‘X’ into the top of the dough, extending almost to the edges.
  • Brush the top of the loaf with a little heavy cream for a beautiful golden crust. Bake for 35-45 minutes, or until the crust is golden brown and a skewer inserted into the center comes out clean. If you tap the bottom of the loaf, it should sound hollow. Allow the bread to cool completely on a wire rack before slicing.
  • Ensure 1 stick (½ cup) of unsalted butter is at room temperature. In a medium bowl, combine the softened butter with ½ cup of powdered sugar. Using an electric mixer on medium speed, beat until the mixture is light and fluffy. Next, add in 2 tablespoons of pure honey, 1 teaspoon of ground cinnamon, ¼ teaspoon of vanilla extract, and a tiny pinch of salt. Continue to beat for another 1-2 minutes until everything is thoroughly incorporated and the butter is beautifully smooth, light, and airy.
  • Once your Irish Soda Bread has cooled sufficiently, slice generous wedges and serve warm with the freshly whipped Cinnamon Honey Butter.
