  • 1 head Cabbage, shredded
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 can (14.5 ounces) Diced Tomatoes, undrained

  • 1 cup Beef Broth
  • 2 teaspoons Chili Powder
  • 1.5 teaspoons Smoked Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Salt, or to taste
  • 0.5 teaspoon Black Pepper, or to taste
  • 2 cups Frito Corn Chips, coarsely crushed
  • 1 cup Cheddar Cheese, shredded
  • 0.5 cup Sour Cream
  • 1 tablespoon Lime Juice, fresh
  • 2 tablespoons Fresh Cilantro, chopped
  • 0.25 teaspoon Garlic Powder
  • Pinch Salt (for topping)

Instructions

  • Heat a large, heavy-bottomed skillet or Dutch oven over medium-high heat. Add the ground beef (or turkey) and cook, stirring occasionally and breaking it up with a wooden spoon, until browned and no longer pink. Drain off any excess fat. Add the chopped onion to the skillet with the browned meat and sauté for about 5-7 minutes, until the onions soften and become translucent. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  • Add the shredded cabbage to the skillet and stir it into the meat and onion mixture, allowing it to wilt slightly for about 5 minutes. Pour in the diced tomatoes (undrained), the can of green chilies, and the beef broth. Stir in the chili powder, smoked paprika, cumin, a generous pinch of salt, and freshly ground black pepper. Give everything a good stir. Bring the mixture to a gentle simmer, then reduce the heat to low, cover the skillet, and let it cook for 20-25 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded. The mixture should be thick and saucy. Taste and adjust seasonings if needed.
  • While the cabbage is simmering, in a small bowl, combine the sour cream, fresh lime juice, finely chopped fresh cilantro, garlic powder, and a dash of salt. Whisk everything together thoroughly until smooth and well combined.
  • Spoon the warm, savory cabbage and meat mixture evenly into an oven-safe dish or keep it in your cast iron skillet. Generously sprinkle a layer of shredded cheddar cheese over the top. Then, spread a bountiful layer of Frito corn chips over the cheese. Dollop or drizzle the prepared zesty sour cream topping artfully over the Fritos. Serve immediately, adding any optional festive garnishes as desired.
