  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 1 medium bell pepper, diced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (16 ounce) package frozen mixed vegetables
  • 4 medium russet potatoes, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  • Preheat oven to 375°F (190°C).
  • Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  • Add the diced onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
  • Stir in the diced tomatoes, cream of mushroom soup, frozen mixed vegetables, salt, pepper, garlic powder, and onion powder. Mix well.
  • In a greased 9×13 inch baking dish, layer half of the ground beef mixture, followed by half of the sliced potatoes. Repeat the layers.
  • Top with the shredded cheddar cheese.
  • Bake for 45 minutes, or until the potatoes are tender and the cheese is melted and golden brown.
  • Let cool slightly before serving.
