This creaming process incorporates air, contributing to the cookies’ tender texture.
  • Next, beat in the single egg yolk and the pure vanilla extract until fully combined; scrape down the sides of the bowl to ensure everything is incorporated. In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the dough just comes together, being careful not to overmix, as this can lead to tough cookies. The dough should be soft and pliable, but not sticky.
  • Divide the dough into two equal portions, flatten each into a disc, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes, or up to an hour. This chilling step is vital as it firms up the butter, prevents spreading, and makes the dough much easier to roll out and cut.
  • Once chilled, preheat your oven to 375°F (190°C) and line baking sheets with parchment paper. On a lightly floured surface, roll out one disc of dough to about 1/4-inch thickness. Use your favorite bunny-shaped cookie cutters to cut out the shapes, carefully transfer them to the prepared baking sheets, leaving about an inch between each cookie.   • Then, using a separate piping bag (or a squeeze bottle) filled with your thinned flood icing, fill in the outlined areas, using a toothpick or small offset spatula to spread the icing evenly to the edges and pop any air bubbles. Allow the flood icing to dry completely, which can take several hours or even overnight, depending on humidity. Once dry, use the stiff icing and smaller tips to add charming details like eyes, noses, whiskers, inner ears, or even tiny bow ties. Let these details set for another hour before handling.
