  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 1 cup Red Wine
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Dried Thyme
  • 1/2 tsp Dried Rosemary
  • 1 Bay Leaf
  • Salt and Pepper to taste
  • Fresh Parsley, chopped (for garnish)

Instructions

  • Sear the lamb in a skillet until browned on all sides. This step enhances the flavor of the stew.
  • Place all ingredients (lamb, carrots, celery, onion, garlic, potatoes, beef broth, tomato paste, red wine, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper) into a crockpot.
  • Cook on low for 4-6 hours, or on high for 2-3 hours, or until the lamb is very tender and the vegetables are cooked through. Cooking time varies depending on your crockpot.
  • Remove the bay leaf before serving. Garnish with fresh parsley.
