  • 1 pound Italian sausage (mild or hot), removed from casings
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (any color)
  • 2 cloves garlic, minced
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (10.75 ounce) can cream of chicken soup
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups shredded cheddar cheese, divided
  • 1 (12 ounce) bag egg noodles, cooked according to package directions
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  • Brown the sausage in a skillet over medium heat. Drain off any excess grease.
  • In a slow cooker, combine the browned sausage, onion, bell pepper, garlic, cream of mushroom soup, cream of chicken soup, and diced tomatoes.
  • Stir in the cooked egg noodles, Italian seasoning, salt, and pepper.
  • Mix in half of the cheddar cheese (1 cup).
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until heated through.
  • Sprinkle the remaining cheddar cheese (1 cup) over the top of the casserole during the last 30 minutes of cooking.
  • Let stand for 10 minutes before serving.
