  • 2-3 pounds fully cooked boneless ham steak or leftover holiday ham
  • 2 pounds Yukon gold or red potatoes, cut into 1-inch chunks
  • 1 pound fresh or frozen green beans
  • 1 medium yellow onion, chopped
  • 2-3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar (optional)
  • Salt & Pepper to taste
  • Instructions

  • Place the potatoes and onions at the bottom of the crockpot.
  • Add the ham and green beans on top.
  • In a small bowl, whisk together the chicken broth, Dijon mustard, brown sugar (if using), garlic, salt, and pepper.
  • Pour the broth mixture over the ingredients in the crockpot.
  • Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the potatoes are tender.
  • Taste and adjust seasoning as needed. Serve hot.
