  • 6 large, fresh eggs
  • ½ cup granulated sugar
  • ½ cup pure maple syrup
  • 1 cup good-quality bourbon
  • 2 cups heavy cream
  • 2 cups whole milk
  • ½ teaspoon freshly grated nutmeg
  • 1 teaspoon pure vanilla extract
  • A pinch of salt

Instructions

  • Separate the egg yolks from the whites. In a large bowl, whisk together the egg yolks and sugar until pale and slightly thickened.
  • In a saucepan, combine the maple syrup, bourbon, heavy cream, milk, nutmeg, and vanilla extract. Heat over low heat, stirring constantly, until just warmed through.
  • Temper the egg yolk mixture by slowly drizzling a small amount of the warm cream mixture into the egg yolk mixture, whisking constantly to prevent curdling. Repeat this process a few times until the egg yolk mixture is warmed.
  • Pour the tempered egg yolk mixture into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (about 5-7 minutes). Be careful not to overcook the mixture.
  • Remove from heat and stir in the salt.
  • Let the eggnog cool slightly, then transfer to an airtight container and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  • Before serving, whisk the egg whites until stiff peaks form. Gently fold the whipped egg whites into the chilled eggnog. Alternatively, serve without the whipped egg whites.
  • Serve chilled in festive glasses or mugs. Garnish with whipped cream, a sprinkle of nutmeg, and a cinnamon stick, if desired.
