  • 5 lbs Yukon Gold potatoes, peeled and quartered
  • 1 cup (2 sticks) unsalted butter, cut into cubes
  • 1 cup heavy cream, warmed
  • ½ cup whole milk, warmed
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and Pepper to taste
  • Optional Add-ins: Sour cream, cream cheese, chives, bacon bits, roasted vegetables

Instructions

  • Place the potatoes in a large pot and cover them with cold water. Bring the water to a boil and then reduce the heat to a simmer.
  • Cook the potatoes until they are fork-tender but not falling apart.
  • Drain the potatoes and return them to the pot.
  • Add the butter, heavy cream, milk, garlic, rosemary, and thyme to the pot.
  • Use a potato ricer or food mill to mash the potatoes until smooth and creamy. Alternatively, use a mixer, being careful not to overmix.
  • Season with salt and pepper to taste.
  • Stir in any optional add-ins, such as sour cream, cream cheese, chives, or bacon bits.
  • Serve hot and garnish with fresh rosemary and thyme sprigs.
