Instructions

  • In a saucepan, whisk together milk, heavy cream, egg yolks, sugar, ginger, cinnamon, cloves, nutmeg, and molasses.
  • Cook over medium heat, stirring constantly, until the mixture reaches 160°F (71°C). Use a thermometer to ensure accurate temperature.
  • Remove from heat and stir in vanilla extract and bourbon or rum (if using).
  • Strain the mixture through a fine-mesh sieve to remove any lumps.
  • Chill thoroughly in the refrigerator for at least 4 hours, or preferably overnight.
  • Serve chilled, garnished with whipped cream, a gingerbread cookie, and a sprinkle of nutmeg.
