  • 1 pound Italian sausage, removed from casing
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 8 ounces lasagna noodles, broken into pieces
  • 5 ounces fresh spinach
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Brown the Italian sausage in a skillet over medium heat. Drain off any excess grease.
  • Transfer the sausage to a slow cooker. Add the onion and garlic.
  • Pour in the chicken broth, and add the Italian seasoning, salt, and pepper. Stir to combine.
  • Cover and cook on low for 3-4 hours, or on high for 1.5-2 hours.
  • During the last 30-45 minutes of cooking, add the lasagna noodles and spinach. Stir to combine.
  • Cook until the noodles are tender, stirring occasionally to prevent sticking.
  • Stir in the heavy cream, ricotta cheese, mozzarella cheese, and Parmesan cheese. Cook until the cheese is melted and the soup is heated through.
  • Taste and adjust seasoning as needed. Serve hot, garnished with extra ricotta cheese, Parmesan cheese, and fresh basil, if desired.
