  • 1.5 pounds boneless, skinless chicken breast
  • 1 (16-ounce) package potato gnocchi
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks of celery, diced
  • 4 cloves of garlic, minced
  • 8 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish
  • Optional: Spinach or kale

Instructions

  • Sauté the onion, carrots, and celery in olive oil until softened.
  • Add the garlic and cook for another minute.
  • Add the chicken breast and brown on all sides.
  • Pour in the chicken broth and add Italian seasoning. Bring to a boil, then reduce heat and simmer for 20 minutes, or until chicken is cooked through.
  • Remove the chicken and shred it. Return the shredded chicken to the pot.
  • Stir in the gnocchi and cook until tender, about 3-5 minutes.
  • Stir in the heavy cream and heat through. Do not boil.
  • Season with salt and pepper to taste. Garnish with fresh parsley and serve hot.
