  • 2 boneless, skinless chicken breasts
  • 1 pound penne, rotini, or farfalle pasta
  • 2 cups sharp white cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional garnish)
  • Chopped green onions (optional garnish)

Instructions

  • Cook the pasta according to package directions until al dente. Drain and set aside.
  • Cut the chicken breasts into bite-sized pieces. In a large skillet, heat olive oil over medium-high heat. Season the chicken with Cajun seasoning, salt, and pepper.
  • Sear the chicken until golden brown and cooked through. Remove from the skillet and set aside.
  • In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  • Whisk in all-purpose flour and cook for 1-2 minutes to create a roux.
  • Gradually whisk in chicken broth and heavy cream, stirring constantly to prevent lumps. Bring to a simmer.
  • Reduce heat to low and stir in shredded white cheddar cheese until melted and smooth.
  • Add the cooked chicken and pasta to the sauce. Toss to coat everything evenly.
  • Taste and adjust seasoning as needed. Garnish with fresh parsley or green onions, if desired. Serve immediately.
