  • 3 cups (360g) all-purpose flour, plus more for dusting
  • 1/2 cup (100g) granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (113g) cold unsalted butter, cut into cubes
  • 2 tablespoons orange zest
  • 3/4 cup dried cranberries
  • 3/4 cup buttermilk (or milk with 1 tablespoon of lemon juice)
  • 1 large egg, beaten (for egg wash)
  • Turbinado sugar, for sprinkling (optional)

Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Add the cold, cubed butter to the dry ingredients. Use a pastry blender or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
  • Add the orange zest, dried cranberries, and buttermilk to the bowl. Gently mix until just combined. Be careful not to overmix the dough.
  • Turn the dough out onto a lightly floured surface. Gently pat the dough into a 1-inch thick circle. Use a sharp knife or a bench scraper to cut the circle into 8 wedges.
  • Place the scones onto a baking sheet lined with parchment paper. Brush the tops with the beaten egg and sprinkle with turbinado sugar, if desired. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until golden brown.
  • Remove the scones from the oven and let them cool on a wire rack for a few minutes before serving.
