3 cups (360g) all-purpose flour, plus more for dusting
1/2 cup (100g) granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (113g) cold unsalted butter, cut into cubes
2 tablespoons orange zest
3/4 cup dried cranberries
3/4 cup buttermilk (or milk with 1 tablespoon of lemon juice)
1 large egg, beaten (for egg wash)
Turbinado sugar, for sprinkling (optional)
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Add the cold, cubed butter to the dry ingredients. Use a pastry blender or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
Add the orange zest, dried cranberries, and buttermilk to the bowl. Gently mix until just combined. Be careful not to overmix the dough.
Turn the dough out onto a lightly floured surface. Gently pat the dough into a 1-inch thick circle. Use a sharp knife or a bench scraper to cut the circle into 8 wedges.
Place the scones onto a baking sheet lined with parchment paper. Brush the tops with the beaten egg and sprinkle with turbinado sugar, if desired. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until golden brown.
Remove the scones from the oven and let them cool on a wire rack for a few minutes before serving.
