Ingredients

  • All-Purpose Flour
  • Granulated Sugar
  • Baking Powder
  • Salt
  • Eggs
  • Milk
  • Vegetable Oil
  • Orange Zest
  • Orange Juice
  • Cranberries
  • Powdered sugar
  • Orange juice (for glaze)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the eggs, milk, vegetable oil, orange zest, and orange juice.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Gently fold in the cranberries.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • If making a glaze, whisk together powdered sugar and orange juice until smooth. Drizzle over the cooled bread.
