Instructions

  • Prepare your Madeleine pan: lightly brush each cavity with melted butter, then dust thoroughly with flour, tapping out any excess. In a small saucepan, gently melt the unsalted butter until just barely browned and fragrant – this is your “beurre noisette” or browned butter, which adds an incredible depth of flavor. Remove from heat and let it cool slightly.
  • In a large bowl, whisk together the eggs and granulated sugar until the mixture is pale yellow, thick, and ribbons when lifted with the whisk – this takes about 5-7 minutes with an electric mixer. This incorporation of air is key for the Madeleine’s signature hump. Gently fold in the lemon zest and vanilla extract.
  • In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until just combined; be careful not to overmix, as this can develop the gluten too much and result in tough Madeleines.
  • Finally, gently fold in the cooled browned butter. The batter should be smooth, slightly thick, and glossy. Cover the bowl with plastic wrap and refrigerate the batter for at least 2 hours, or preferably overnight. This chilling step is absolutely essential for achieving that characteristic hump and a tender crumb; it allows the butter to solidify and the gluten to relax.
  • When you’re ready to bake, preheat your oven to 400°F (200°C).
  • Once your beautiful Madeleines have cooled for just a few minutes out of the oven, allowing them to firm up slightly but still retain some warmth, it’s time for their final flourish. Take your fine-mesh sieve filled with powdered sugar and hold it above the Madeleines. Gently tap the side of the sieve, allowing a light, even shower of powdered sugar to drift down and settle over each shell-shaped treat.
