  • 2 ½ cups Circus Animal Cookies (divided, 1 cup whole for decorating, 1 ½ cups crushed for mixing in)
  • ¼ cup Sprinkles (for mixing in, optional)
  • 1 cup White Chocolate Chips or Coating Wafers
  • 2-3 drops Food Coloring (optional, for pink coating)
  • ¼ cup More Sprinkles (for topping)
  • 6-8 More Circus Animal Cookies (for topping)

Instructions

  • Gather all ingredients and prepare a 9×13 inch baking pan by lightly greasing it with butter or cooking spray, then lining it with parchment paper, leaving an overhang on the sides for easy removal. Set aside about 1 cup of whole Circus Animal Cookies for decorating the top. Roughly chop or crush 1 ½ cups of additional Circus Animal Cookies; ensure they are not a fine powder, but have nice chunky pieces for texture.
  • In a large, heavy-bottomed pot or Dutch oven, melt the unsalted butter over low heat. Once the butter is mostly melted, add the mini marshmallows. Continue stirring constantly over low heat until the marshmallows are completely melted and smooth. Remove the pot from the heat.
  • Stir in the vanilla extract until well combined and fragrant. Working quickly, add the Rice Krispies cereal to the marshmallow mixture. Gently fold them in with a rubber spatula until the cereal is evenly coated, being careful not to crush the cereal.
  • Immediately after the cereal is coated, gently fold in the reserved 1 ½ cups of crushed Circus Animal Cookies. Mix just enough to distribute them without overworking the mixture. Transfer the mixture to your prepared 9×13 inch pan. Using a buttered spatula or buttered hands, gently press the mixture evenly into the pan. Do not press too firmly. Set aside to cool completely at room temperature for 1 to 2 hours.
  • Once the Rice Krispie treats have cooled and set, combine the white chocolate chips or coating wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly after each interval, until the chocolate is completely melted and smooth. If desired, add a few drops of pink gel food coloring to the melted white chocolate and stir until you achieve your desired shade.
  • Immediately pour the melted white chocolate over the cooled Rice Krispie treats in the pan. Using an offset spatula or the back of a spoon, carefully spread the melted white chocolate evenly across the entire surface, extending it to the edges. While the white chocolate is still wet and glossy, liberally sprinkle your extra sprinkles over the surface. Then, artfully arrange your reserved whole Circus Animal Cookies on top of the sprinkles, pressing them down slightly so they adhere.
  • Let the treats sit at room temperature for at least 30 minutes, or until the white chocolate has fully set and hardened. Once set, use the parchment paper overhangs to lift the entire slab out of the pan onto a cutting board. Using a large, sharp knife (you can butter it lightly for cleaner cuts), slice the treats into squares.
