Ingredients

  • Mixed Greens (spinach, arugula, romaine, or baby kale)
  • Pomegranate Seeds (Arils)
  • Feta Cheese
  • Toasted Pecans (or Walnuts)
  • Red Onion
  • Olive Oil
  • Balsamic Vinegar
  • Honey (or Maple Syrup)
  • Dijon Mustard
  • Salt
  • Pepper

Instructions

  • Toast pecans on a baking sheet at 350°F (175°C) for 5-7 minutes, or until fragrant and lightly golden.
  • Thinly slice red onion. Soak in cold water for 10-15 minutes to mellow the flavor if desired.
  • In a small bowl, whisk together olive oil, balsamic vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper to make the vinaigrette.
  • In a large bowl, combine mixed greens, pomegranate seeds, feta cheese, toasted pecans, and red onion.
  • Drizzle the vinaigrette over the salad and toss gently to coat. Serve immediately.
