1 pound pasta (fettuccine, pappardelle, penne, or rigatoni)
¼ cup extra virgin olive oil
4 cloves garlic, minced
½ cup oil-packed sun-dried tomatoes, drained and chopped
1 ½ cups heavy cream
½ cup grated Parmesan cheese
¼ cup chopped fresh basil
¼ cup toasted pine nuts
Salt and Black Pepper to taste
Optional: Red pepper flakes
Optional: Cooked chicken or shrimp
Optional: Splash of white wine
Instructions
Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
While the pasta is cooking, heat the olive oil in a large skillet over medium-low heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
Add the sun-dried tomatoes to the skillet and cook for another minute.
Pour in the heavy cream and bring to a simmer. Reduce the heat to low and simmer for 5-7 minutes, or until the sauce has thickened slightly.
Stir in the Parmesan cheese until melted and smooth.
Season the sauce with salt, pepper, and red pepper flakes (if using) to taste.
Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
Stir in the fresh basil and toasted pine nuts. Add cooked chicken or shrimp, if desired.
Serve immediately and garnish with additional fresh basil and toasted pine nuts.
