Ingredients

  • 1 pound pasta (fettuccine, pappardelle, penne, or rigatoni)
  • ¼ cup extra virgin olive oil
  • 4 cloves garlic, minced
  • ½ cup oil-packed sun-dried tomatoes, drained and chopped
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh basil
  • ¼ cup toasted pine nuts
  • Salt and Black Pepper to taste
  • Optional: Red pepper flakes
  • Optional: Cooked chicken or shrimp
  • Optional: Splash of white wine

Instructions

  • Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium-low heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
  • Add the sun-dried tomatoes to the skillet and cook for another minute.
  • Pour in the heavy cream and bring to a simmer. Reduce the heat to low and simmer for 5-7 minutes, or until the sauce has thickened slightly.
  • Stir in the Parmesan cheese until melted and smooth.
  • Season the sauce with salt, pepper, and red pepper flakes (if using) to taste.
  • Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  • Stir in the fresh basil and toasted pine nuts. Add cooked chicken or shrimp, if desired.
  • Serve immediately and garnish with additional fresh basil and toasted pine nuts.
