  • 4 boneless, skinless chicken breasts
  • 2-3 chipotle peppers in adobo sauce, chopped
  • 2 cups cooked long-grain rice (jasmine or basmati)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1/2 onion, chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Toppings: corn, black beans, avocado, salsa, sour cream, cilantro, shredded cheese

Instructions

  • In a bowl, combine the chicken breasts, chipotle peppers, olive oil, lime juice, garlic, onion, cumin, oregano, chili powder, smoked paprika, salt, and pepper. Marinate for at least 30 minutes, or up to overnight in the refrigerator.
  • Heat a skillet over medium-high heat. Cook the chicken until it is cooked through and reaches an internal temperature of 165°F (74°C).
  • While the chicken is cooking, prepare the rice according to package instructions.
  • Slice or shred the cooked chicken.
  • Assemble the rice bowls: Add rice to each bowl, top with chicken, and add your favorite toppings.
  • Serve immediately and enjoy!
