  • Combine the tapioca flour, brown sugar, and a pinch of salt in a large heatproof bowl. Whisk these dry ingredients together until they are well incorporated. In a small saucepan, heat the water until it just begins to simmer, but don’t bring it to a rolling boil. Carefully pour the hot water into the dry tapioca mixture, stirring immediately and vigorously with a wooden spoon or a heatproof spatula. The mixture will quickly start to thicken and form a shaggy dough. Continue mixing until a cohesive, albeit slightly sticky, dough forms. At this point, turn the dough out onto a clean, lightly floured work surface. Allow it to cool for a few minutes until it’s comfortable enough to handle.
  • Once cooled, knead the dough for about 5-7 minutes. Add a tiny splash of vegetable oil to prevent sticking and aid in elasticity. You’ll notice the dough becoming smooth, pliable, and elastic, resembling a soft play-doh. If it feels too stiff, add a few drops of hot water; if too sticky, gently knead in a tiny bit more tapioca flour, a teaspoon at a time. The dough should be soft enough to roll but not excessively sticky. Divide the dough into small, manageable portions. Roll each portion into a long, thin rope, about 1/4 inch in diameter. Using a knife, cut the ropes into small, even pieces, approximately 1/4 inch in length. Now, here’s the fun part – roll each small piece into a perfect sphere between your palms. For uniform pearls, try to keep them all roughly the same size. As you form them, dust them lightly with extra tapioca flour to prevent them from sticking together. This is crucial for their individual cooking. Once all your pearls are formed, you can either cook them immediately or store them lightly floured in an airtight container for later. Remember, avoid overworking the dough too much with extra flour, as it can make the pearls tougher. The perfect dough will yield pearls that are soft to the touch but hold their shape beautifully.

  • To cook your beautiful tapioca pearls, bring a large pot of water to a rolling boil. Once boiling furiously, carefully drop the homemade tapioca pearls into the water. Stir gently to prevent them from sticking together initially. The pearls will sink to the bottom. Once they float to the surface, reduce the heat to medium and continue to cook for approximately 15-20 minutes, or until they reach your desired chewiness. For perfectly tender yet chewy pearls, they should be translucent with a soft give in the center. Immediately after cooking, scoop the pearls out with a slotted spoon and transfer them to a bowl of ice water for 1-2 minutes. This stops the cooking process and prevents them from sticking. Drain the chilled pearls and then immerse them directly into your prepared brown sugar syrup. Allow them to steep for at least 15-30 minutes, or longer if you prefer a deeper flavor infusion.
