Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (113 grams) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tablespoons fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • A few drops of food coloring (pastel shade, optional)
  • 1 cup powdered sugar (for rolling)
  • For Lemon Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon milk (or more, as needed)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon zest

Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  • In a large bowl, using an electric mixer, cream together the softened unsalted butter and granulated sugar until it’s light and fluffy, usually 2-3 minutes.
  • Beat in the large eggs one at a time, ensuring each is fully incorporated before adding the next. Scrape down the sides of the bowl as needed. Now, add the fresh lemon zest, fresh lemon juice, vanilla extract, and almond extract. Mix until just combined. For color, add a few drops of food coloring – start with a little and add more until you reach your desired pastel shade. Mix well.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix. The dough should be soft and slightly sticky.
  • Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes, or up to 2 hours. This step is crucial for the dough to firm up and ensures perfect crinkles.
  • Once chilled, prepare a shallow bowl with a generous amount of powdered sugar. Spoon out rounded tablespoons of dough and roll them into smooth balls, about 1 inch in diameter. Immediately and generously roll each dough ball in the powdered sugar until it is completely coated. Don’t be shy – a thick coating is what creates those beautiful cracks! Place the coated dough balls about 2 inches apart on your prepared baking sheets.
  • Bake for 9-11 minutes, or until the edges are just set and the centers are still slightly soft. The cookies will puff up, and the powdered sugar coating will crack as they spread. They should not be deeply golden. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  • While your cookies are cooling, in a small bowl, whisk together the powdered sugar, fresh lemon juice, a splash of milk (start with a tablespoon and add more if needed), and a few drops of vanilla extract until completely smooth. Stir in a touch of fresh lemon zest for an extra pop of flavor.
  • Once your Springtime Crinkle Cookies are completely cool, gently dip the tops of the cookies into the lemon glaze, or use a spoon to artfully drizzle the glaze over each cookie in a zig-zag pattern. Let the glazed cookies set on the wire rack for about 15-20 minutes, or until the glaze has hardened slightly.

Notes

Welcome to a burst of fresh flavor and vibrant color! These Springtime Crinkle Cookies are an absolute dream, marrying the chewy, soft texture of a classic crinkle cookie with the delicate, bright notes of lemon and a hint of floral sweetness. Each bite delivers a delightful contrast: a slightly crisp exterior dusted with powdered sugar that gives way to an incredibly tender, cake-like interior. They’re visually stunning, too, with their charming cracks revealing peeks of pastel hues, making them the perfect edible celebration for spring, Easter, or any occasion that calls for a little sunshine.
