  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • ½ teaspoon Cinnamon
  • ½ cup Chopped Nuts (Optional)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • In a separate bowl, whisk together the rolled oats, shredded coconut, flour, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in chopped nuts, if using.
  • Chill the dough for at least 30 minutes.
  • Drop by rounded tablespoons onto ungreased baking sheets.
  • Bake for 10-12 minutes, or until golden brown.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
