  • Cook the elbow macaroni according to package directions until al dente. Drain and set aside.
  • In a large pot or Dutch oven, melt the butter over medium heat. Add the sliced yellow onions and cook slowly, stirring occasionally, until caramelized, about 45 minutes. Add the minced garlic during the last few minutes of caramelization.
  • Deglaze the pot with dry sherry, scraping up any browned bits from the bottom. Add the beef broth, dried thyme, and bay leaf. Bring to a simmer and cook for 15 minutes to allow the flavors to meld.
  • Remove the bay leaf from the broth.
  • In a separate saucepan, melt the remaining butter over medium heat. Whisk in the all-purpose flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  • Gradually whisk in the whole milk, stirring continuously to prevent lumps. Bring to a simmer and cook until the sauce has thickened, about 5-7 minutes.
  • Reduce the heat to low and gradually add the shredded Gruyere cheese, sharp cheddar cheese, and grated Parmesan cheese, stirring constantly until the cheese is melted and the sauce is smooth and creamy.
  • Season the cheese sauce with salt and pepper to taste.
  • Pour the cheese sauce over the cooked macaroni and caramelized onion mixture in the pot. Stir to combine until everything is evenly coated.
  • If desired, transfer the mac and cheese to an oven-safe dish and broil for a few minutes until the top is golden brown and bubbly. Watch it carefully to prevent burning.
  • Garnish with fresh parsley, if desired. Serve hot.
