Ingredients

Scale
  • 500 grams cream cheese, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream, cold
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 12 flour tortillas, 6-inch
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup fresh berries
  • 1/4 cup chocolate syrup
  • 1/4 cup caramel sauce
  • 1 cup whipped cream
  • Instructions

  • Preheat your oven to 375°F (190°C). Melt unsalted butter in a small dish. In another shallow bowl, combine 1/2 cup granulated sugar and ground cinnamon. Brush both sides of each flour tortilla generously with melted butter. Dredge each buttered tortilla through the cinnamon-sugar mixture, pressing gently to make sure it adheres well. Drape each sugared tortilla over two bars of your oven rack, allowing it to hang in a 'U' shape. Bake the tortillas for about 8-10 minutes, or until they’re golden brown and wonderfully crispy. Let them cool completely on a wire rack to firm up.
  • In a large mixing bowl, using an electric mixer, beat the softened cream cheese on medium speed until it's completely smooth and free of any lumps. Gradually add 1 cup granulated sugar, continuing to beat until the mixture is light and fluffy (about 2-3 minutes). Add the vanilla extract, lemon juice, and salt, mixing just until combined. Pour in the cold heavy cream and continue beating on medium-high speed until the mixture is thick, creamy, and holds soft peaks. Be careful not to overbeat.
  • Once your cinnamon-sugar taco shells are completely cool and crisp, gently fill each one with a generous dollop of the creamy cheesecake filling. You can use a spoon for a rustic look or pipe the filling using a piping bag. Arrange your filled tacos beautifully on a serving platter.
  • Elevate your Cheesecake Tacos with an array of dazzling decorating ideas. Garnish with fresh berries like strawberries, blueberries, and raspberries, or drizzle generously with melted dark chocolate or a rich chocolate ganache. Caramel lovers can enjoy a swirl of homemade salted caramel sauce, perhaps topped with a few toasted pecans. For a lighter touch, a cloud of freshly whipped cream can be piped on top, crowned with a cherry. Serve immediately or store as recommended.
